Strawberry Milk Cupcakes

What a wonderful and hectic weekend I have had . It was cricket world cup fever in my house  and over every other Indian's house and after about 28 years of waiting our wonderful team made us proud and brought the cup back home . It was an incredible moment when the team won it and wowoowowo what a win that was , Kudos to the Indian team for giving us such a fine game .
Coming back to today's post , I had a wonderful time with my school buddies and had made these cupcakes for them and was very glad that they loved it , it is a simple recipe and quick to make too . This recipe is just another adaptation of my vanilla cupcake recipe so here goes.......

100 gms unsalted butter room temp
3/4 cup sugar
2 eggs
1 tbsp vanilla essence
1 and 1/2 cups all-purpose flour
1 and 3/4 tsp baking powder
1/2 cup strawberry milk
1/2 cup milk ( fat , low-fat , anything will do )

for the frosting

1/2 cup whipping cream
1/2 cream cheese
2 tbsp or more icing sugar
pink food coloring

fresh strawberries for garnish

Cream the butter and sugar till light and fluffy
Add the eggs and the vanilla, beat it well
Sift the dry ingredients together and fold it in the mixture
Now add both the milk and mix it well
Pour into greased and lined muffin moulds and bake in a preheated 180 c oven for about 20 -25 min or till a toothpick inserted comes out clean .
For the frosting , beat the cream , icing sugar , cheese and pink food coloring till stiff .
Pipe swirls onto cooled cupcakes and garnish with fresh strawberries .

  2. Thank you Deidre and I will let my hubby know about the box :)

  5. Those cupcake are so adorable! Sound so fresh and yummy, too.
It was a madness in my house last week, too. Especially the final match, the whole area was like in the firework war :)

  6. Thank you Peggy , Tammy and Tes and , Tes wasn't it a really really good match , just like watching an action packed movie :D

  7. i saw the cup cakes leave my house with out getting one. well i am glad ur friends liked it... but u could have given me one.. ;(

  8. those are so good...mighty delicious too by the ingredients i guess.

  9. Am looking for kids special cup cakes and muffins for Aby's bday party. Don't want choc based as am already making choc cake. What's strawberry milk? We don't get ready made but can I blend fresh strawberries in milk and make some?

    1. Yes Thoma , u can do that , just strain it after blending . This recipe yields about 10 - 12 small to medium cupcakes . Have fun and tell me how it goes :D .

  10. And approx how many did they yield?

  11. k am gonna try this with rose milk. tell me would 3/4 cup sugar be enough for 1 1/2 cup flour. will it be Indian-sweet enough without the frosting (am planning the frosting but in case)?

    1. All of my recipes are a little less on the sweet side , but if you want more add in 1/4 cup extra sugar . Tell me how it turns out :) .

  12. These are delectable! I doubled the portion; used rose milk and vanilla and rose essence. And used 1 1/4 cups sugar for 1 1/2 maida!! Yes it's correctly sweet. Otherwise not many enjoy it this side. Thank you.

  13. Hey
