Nigella's Chocolate Banana Muffins

By now , you all must know that I am a huge Nigella fan , I just love.....love.....love her recipes , they all turn out so well , never has it not worked for me . I have so many things going on right now that I have absolutely no time to think or create some new flavours and recipes . I am in the middle of moving house and the kids have their hands full with their exams and stuff that it is an absolute mess around here . I thought I better get at least one new post in before I move because who knows when I will get the net connection and also get settled in .
I had a couple of bananas rotting here and was bored of making the stuff I know so I thought why not give this recipe a try , it sounds simple and delicious and as usual Nigella does not disappoint , these muffins were just too good , they were so moist and delish so here goes ................






INGREDIENTS

3 very ripe bananas
125 ml vegetable oil
2 eggs
100 gms light brown sugar
225 gms plain flour
3 tbsp cocoa powder
1 tsp baking soda

METHOD

Mash the bananas well .
Add the oil and mash it and then add the eggs and sugar and mix it well
Sift the dry ingredients together and then add them to the wet mixture and mix it up .
Grease and line the muffin pan and spoon the mixture into the muffin moulds till 3/4 full .
Bake in a preheated 200 c oven for about 15 - 20 min or till a toothpick inserted comes out clean .
Makes nice round and shiny 12 muffins .

Easy Peasy Banana and Chocolate Chips Muffins

I think it takes half the time to make these than typing it's name ;) . Seriously it's that easy to whip up a batch of this . My kids and hubby loves them so I make these quite often . It's tastes best straight out of the oven so here goes............

INGREDIENTS

3 ripe bananas
50 gms butter melted
1 egg
1 tsp vanilla essence
3-4 tbsp sugar
1 cup unbleached white flour or all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
a pinch of salt
1/4 cup or more if you like chocolate chips

METHOD

In a large mixing bowl , add the melted butter and the bananas and mash them .
Add the egg , vanilla and sugar and mix well
Sift all the dry ingredients together and add it to the mixture .
Mix it up but take care not to over mix it .
Stir in the chocolate chips .
Line the muffin pan with paper cases and bake in a preheated 180 c oven for about 25 min or till done .
This makes 6 large muffins .

Apple Cinnamon Muffins

Muffins are the most easiest and delicious things to make . It is perfect for breakfast or afternoon tea . These subtly spiced muffins are easy to make and delicious to eat right out of the oven . I got this recipe from a favourite cook book of mine and make it very often . The topping is crisp and the muffins are quite soft so here goes ............



INGREDIENTS

50 gm butter melted
1/2 cup milk
1 egg beaten
3 tbsp sugar
1 1/4 cup all-purpose flour
1 and 1/2 tsp baking powder
a pinch of salt
1/2 tsp cinnamon powder
2 small apples , peeled , cored and finely chopped

for the topping

12 brown sugar cubes , roughly crushed
1 tsp cinnamon powder

METHOD

In a bowl , mix the egg , sugar , milk and melted butter..
Sift the dry ingredients together and mix it in the bowl taking care not to overmix .
Add the chopped apple and mix roughly
Line six large muffin tin with paper cases
Spoon the mixture into the prepared tin .
To make the topping, mix the crushed sugar cubes with the cinnamon.
Sprinkle over uncooked muffins
Bake in a preheated 200 c oven for 30-35 min.

TIP

You can also use light brown sugar instead of the brown sugar cubes.

Chocolate Chip Mini Muffins

I love , love muffins because it is so light and yummy and above all very easy to make . I make these muffins almost all the time because everyone loves them in my house and it is a big hit with all the kids .It is very easy to whip up a batch of this , so here goes ...............








INGREDIENTS

1 cup all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 salt
2 tbsp sugar
2tbsp honey or maple syrup
1/2 cup yoghurt
1/4 cup water
1 egg
1 tsp vanilla essence
2 tbsp melted butter
3 tbsp chocolate chips

METHOD

Mix all the dry ingredients together
Mix all the wet ingredients together and add it in the dry mix .
Next add in the chocolate chips .
Pour it in a greased  mini muffin tin till quarter full .
Add a few chocolate chips on top .
Bake it in a preheated oven at 180 c for about 10-12 min .

Blueberry muffins

I just love blueberries and I absolutely love anything which has to do with blueberries , this muffin recipe is a very good recipe , it is a very moist and not overly sweet blueberry muffin and the best thing is it is super easy to make , my family just loves them and it is over as soon as I make it , so here goes ............


INGREDIENTS


1 cup or 240 ml low-fat yoghurt
1 large egg
1/4 cup canola or veg oil
1/2 tsp vanilla essence or extract
2 cups or 260 g all purpose flour
1/2 cup or 100gm granulated sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 1/4 cup blueberries fresh or frozen

METHOD


Preheat oven to 375 f or 180 c .
In a large pan whisk together yoghurt ,egg , oil and vanilla .
In another pan mix all the dry ingredients . Remove 1 tbspn of the flour mix and toss it with the blueberries .
Fold the wet ingredients in the flour mix until combined .
Gently stir in the blueberries .
Spoon into a greased or paper lined muffin pan and bake 15-20 min or till u insert a toothpick and it comes out clean .


TIPS

If the mix seems a tad dry then add a couple of tsp of milk . You can also make with any kind of berries or chocolate chips .
