Quick and Easy Prawn and Egg Fried Rice

This is something I make when I am short on time , this is very quick to put together and tastes really fantastic . It only has quite a few ingredients , you can make it with leftover plain rice so here goes................


INGREDIENTS 

2 cups of cooked Basmati rice
2-3 spring onions chopped
3-4 garlic finely chopped
1 inch pc of ginger finely chopped
1 cup of chopped french beans
1 carrot chopped
10 prawns washed and deveined
2 eggs beaten
2 tbsp soy sauce
salt and pepper to taste
1 cube chicken stock
2 tbsp of oil

METHOD

In a saucepan or wok , heat a tbsp of oil and add the white part of the spring onions , garlic and ginger .
Add the prawns and cook it till done stirring it frequently .
Now add in the remaining vegetables and the chicken stock cube and stir fry it for about 5 min .
Add the cooked rice in batches along with the soy sauce , salt and pepper .
Toss everything together till it is all mixed well .
Now add in the beaten egg and the remaining 1 tbsp of oil and mix it all well .
By doing this the rice will be coated with egg .
Garnish with spring onion and serve hot .



NOTE

You can use frozen mixed vegetables . Also for more flavour cook the rice in chicken stock if you wish .

Cajun Spiced Prawns in Parsley Garlic Butter

Whoa !! That was quite a mouthful , and I have given away all the ingredients that is used to make this dish , hahaha , seriously they are the only ingredients used but it tastes just awesome . This recipe is adapted from Pioneer Woman's spicy shrimps , I love her site , I go there almost often and just drool at all the pics there , she is absolutely the best . So without further ado here goes....................


INGREDIENTS 

1 kg prawns cleaned and de-veined
2 tbsp cajun spice powder
1 tbsp red chilli flakes
100 gms butter cold
a handful of parsley
1 clove of garlic

METHOD

Marinate the prawns with the cajun spice powder for a half hour
In a chopper , add the butter , garlic and parsley and grind it all up .
In a baking tin add the prawns in a single layer and add the chilli flakes
Now crumble the butter on top of the prawns .
Bake in a preheated  180 c oven for about 20 min or the prawns are done .
Transfer them to a serving dish and pour over all the juice on top of it .
Now enjoy your prawns and have some crusty bread to dunk into the juicy goodness , absolutely yummm!!!

Spicy Prawn and Mushroom with Egg Noodles

Have you guys heard of the floating book shop called the Logos Hope . It is a ship full of books and can you believe this all of the people who work there are not paid , they work voluntarily , just like it's name their main purpose is to bring hope to people . The money they make selling books is used for charity , what a noble idea it is right ? .In this day and age where selfishness and blatant disregard for others are the most common traits , people like these are very rare to find and everyone can learn something from them .

 They have all kinds of books on board and I  love to read books and especially how a new book smells ( I know it's weird ) ,I'll read anything but  my most favourite kind of books are cookbooks . I love to flip through the pages and drool  at the beautiful pictures . As a little girl , this ship used to come to our city once in a year and I used to bug my parents to take me there and came back a happy girl from there with a load of books and most of them used to be cook books , cooking was passion even then too . Sadly all good things have to come to an end ,the ship then stopped coming .Then something wonderful happened a couple of months back , the ship was scheduled to come here and you can imagine my excitement over that news , I just couldn't wait for it to get here and show my hubby and kids . Oooooh ! I really felt like a little girl again and took my hubby and the kids there and as usual bought a whole load of books and came back , going back there I had such wonderful memories and above all that I could show my kids my favourite place .

Ok enough of my blabbing , I am not boring you anymore , I just mentioned it because the recipe I am posting is from one such book I bought from there , it is a wonderful book with all easy recipes and noodles being my favourite I had to make this , it is spicy and aromatic and just yummy so here goes........


INGREDIENTS

1 tbsp oil
1 onion chopped
1 fresh red chilli chopped finely
1 tbsp thai red curry paste
grated zest and juice of 1 lime
250 gms prawns
400 gms canned button mushrooms
2 tbsp fish sauce
2 tbsp soy sauce
225 gms egg noodles
fresh coriander chopped

METHOD

Heat the oil and add the onions and chilli and saute for a couple of min.
Add the curry paste and the lemon zest and saute for a couple of min .
Add the prawns , mushrooms, lemon juice , fish sauce and the soy sauce .
Mix it all up and cook till the prawns are done .
Cook the noodles in boiling water for a few min and drain and toss it in the prawn mix.
Add the coriander and serve hot .

Quick and Easy Prawn Curry

This is a good  curry to make when you are short on time and also it is quite delicious too , it is mildly spiced and works very well with rotis or just plain boiled rice so here goes.....


INGREDIENTS

500 gms prawns
1 large onion chopped
1 inch pc cinnamon stick
4-6 green cardamoms
3-5 cloves
1 bay leaf
2 tbsp ginger and garlic paste
1 tsp chilli powder
1 tsp cumin powder
1 tsp coriander powder
salt to taste
1 green pepper diced
200 gm canned tomatoes
2 green chillies chopped
1 tbsp fresh coriander chopped

METHOD

Heat 2 tbsp of oil in a pan and fry the onions till soft
Add the whole spices and fry for a min.
Add the spice powders and the ginger and garlic paste and saute it .
Add the green pepper and the canned tomatoes and bring to boil .
Add the prawns and cook till done .
Garnish with chopped coriander and the chopped chillies

Spicy Fried Prawns

This is another one of the many favourites that my mom makes . It is the most delicious ,aromatic prawn dish that I have ever tasted and I absolutely love anything to do with prawns. This is quite a spicy dish but you can control the level of hotness by using less chillies . The spiciness and the tanginess of the sauce brings out the sweetness of the prawns .



INGREDIENTS

1 kg prawns
1/2 cup thick set yoghurt
1 tsp red chilli powder
1/4 tsp turmeric powder
1 tsp coriander powder
salt to taste
1 tbsp ginger and garlic paste
5-6 green chillies split in half
8-10 curry leaves
2 tbsp tomato ketchup
25 gms butter
1 tspn oil
Oil for frying

METHOD

Clean and devein the prawns .
Marinate the prawns with chilli powder, turmeric powder,coriander powder, yoghurt ,salt ,ginger and garlic paste for 1 hr.
Heat oil in a pan and deep fry the marinated prawns , reserve the marinade.
In another pan melt the butter with 1 tspn oil and add the curry leaves and the split green chillies .
Add the tomato ketchup and mix it all up .
Add the fried prawns and the reserve marinade and keep on low heat for 5-10 min.
Serve hot .

TIPS

You can make this dish in chicken too , only marinate the chicken atleast 4 hours or overnight .
